How to Run a Restaurant Field Trial for BBQ Charcoal

The core rule

Test the kitchen system—not a charcoal sample in isolation.

A bench burn test controls combustion variables. A restaurant field trial asks the next question: can the charcoal deliver usable output through real food loads, staff interventions, peaks, refills, ash, and shutdown?

Keep the current charcoal as a baseline and match the operating blocks as closely as practical. Otherwise the candidate may “win” because Tuesday lunch was quiet. Very scientific; also completely useless.
